Probably making its first appearance in Harry's New York Bar in Paris, in the 1930s, Between the Sheets is a beautifully balanced drink - when made properly.

It's a variation of the Side-car cocktail and was said to have been invented by Harry MacElhone who simply replaced some of the cognac with white rum, giving it more of a summery feel.

On the other hand, according to some sources it was invented by Mr. Polly, manager of the Berkeley Hotel, London, in about 1921. Nothing is certain in the world of cocktails!

Between the Sheets fell out of favour for a time but with today's ever-increasing interest in cocktails, it's back up there with the best. And where does the name originate? Maybe too many of these and you will be between the sheets!

Between the Sheets
Fill a cocktail shaker with ice and add all ingredients. Shake well. Strain and serve in a cocktail glass with a twist of lemon.
