There are just two things about the Singapore Sling that everyone seems to agree on: where it was invented – Raffles Hotel in Singapore – and by whom – Mr. Ngiam Tong Boon, the bartender.
It dates from some time between 1910 and 1915, and was originally designed as a drink for the ladies. It fell into disuse for a time and the original recipe was lost, but, by drawing on the memories of the bar staff and the few notes that could be found, it was recreated and is served to this day – in a slightly different form – in Raffles Hotel. Singapore Sling is also supplied free of charge on all Singapore Airlines!
Different versions of the cocktail are prepared not only all over the world but even throughout Singapore. This recipe, which doesn’t include soda, is very close to that served by Raffles Hotel.
Singapore Sling
- 4 parts Gin
- 2 parts Cherry Brandy
- 1 part Cointreau
- 1 part Benedictine
- 16 parts Pineapple Juice
- 2 parts Lime Juice
- 1 part Grenadine
- A Dash of Angostura Bitters
Fill a cocktail shaker with ice cubes. Pour in all the ingredients. Shake well. Strain into long chilled glasses. Serve with a slice of pineapple and a cherry.
